The evaporator in an ice flaker machine is a freezing cylinder where water is directly frozen into a solid sheet and then mechanically scraped off by a blade or auger. This continuous freeze-and-scrape process is what defines the machine's ability to produce a high volume of dry, flake ice efficiently.

Evaporator Shell / Cylinder: This is the stationary freezing surface. It is a vertical or horizontal cylinder where the refrigerant circulates in a jacket around the shell, making the inner wall very cold.

Ice Scraper (Ice Knife)
A helical stainless steel 304 blade rotates against the evaporator wall, cutting off dry, compact flake ice without damaging the surface.

Helical Auger (Screw Conveyor): A large, rotating screw located inside the evaporator shell. It has two main functions:
1. It slowly rotates, lifting water from the bottom and splashing it onto the cold inner wall where it freezes.
2. Its continuous rotation scrapes the formed ice off the wall and transports it upward while compressing and breaking it into flakes.

· Auger Drive System: A powerful motor and gearbox located at the top of the unit that drives the rotation of the helical auger.

Upper and Lower Bearings: These support the auger shaft within the shell, ensuring it rotates centrally and without contacting the cold inner wall.

Ice Outlet / Orifice: Located at the top of the evaporator. The compressed ice is forced through this opening, which determines the final density and shape of the ice flakes.
Water Inlet: The point where water is introduced into the bottom of the evaporator shell.
